Una su tutte, questo rotolo di melanzane farcite.
Visto che nel frigo giacevano 3 melanzane e un po' di pomodori provenienti dall'orto di mio padre ho preso la "melanzana" al balzo e ho provato a riprodurlo.
Devo dire che il risultato mi ha veramente soddisfatto.

Ingredienti per 4 persone:

3 belle melanzane
1 mazzetto di rughetta selvatica
3/4 pomodori ben maturi
1 mozzarella di bufala
breadcrumbs
some leaf:
mint

basil olive oil salt

pepper

Wash and clean the eggplants, then cut into slices with salt and put them to lose a little of their bitterness.
Then cook the eggplant slices on the grill, or alternatively, also on the plate in the oven, the important thing is not too dry, but remains pretty soft.

To serve, simply cut into thick slices about 5 cm, componetelo on the plate, a little oil and you're done!
